Known for her refined yet playful approach to pastry, Chef Merlyn brings warmth and creativity to each dessert she creates. Born and raised in Indonesia, she draws inspiration from Pacific Northwest ingredients while incorporating Asian flavors from her upbringing. At Charlotte Restaurant & Lounge, Chef Merlyn works with the finest ingredients to showcase her sophisticated technique, reimagining well-known classics through a fresh and thoughtful lens.
