Born and raised in Indonesia, she draws inspiration from Pacific Northwest ingredients while incorporating Asian flavors from her upbringing. At Charlotte Restaurant & Lounge, Chef Merlyn works with the finest ingredients to showcase her sophisticated technique, reimagining well-known classics through a fresh and thoughtful lens.
Ryan Pearson
Bringing a distinct point of view, Chef Ryan Pearson leads culinary direction for Lotte Hotel Seattle and Charlotte Restaurant and Lounge with menus highlighting the Pacific Northwest’s seasonal ingredients through thoughtful technique and bold, balanced flavors. Shaped by his experience in Michelin-starred and globally respected kitchens, his approach blends refined training with soulful expression, resulting in an elevated dining experience offering a sense of season, place, and discovery.
