Stunning 16th-Floor Restaurant Elevates Downtown Seattle Dining with Imaginative Dishes Showcasing the Best of Pacific Northwest Cuisine 

 SEATTLE, WA April XX, 2022 – LOTTE HOTEL SEATTLE announced today that Charlotte Restaurant and Lounge will exclusively offer a 3 or 4-Course Prix-Fixe Menu in the dining room, allowing guests to enjoy a fine dining experience in an approachable setting. Helmed by Executive Sous Chef Jeffrey Hunter, the Charlotte Restaurant culinary team has dazzled guests with special prix-fixe menus that have become core to their locally-sourced and seasonal approach to Contemporary Pacific Northwest cuisine.

 “Since serving our first meal in 2020, we’ve been delighted to be the place where locals and visitors of Seattle celebrate special occasions big and small – from first dates to anniversaries to family reunions,” said Victor Caguindagan, General Manager of Lotte Hotel Seattle. “Our multi-course menus have really resonated with guests, and we’re excited about the creative opportunities this offers Chef Hunter and his team.”

 For Spring 2022, the tasting menu will debut with starters including Hamachi with rhubarb, claytonia and sunflower and Dry-Aged Venison Carpaccio with elderberry, candied mushroom, porter aioli and a caraway-rye waffle. Mid-course offerings include Stone Oven Octopus with broccoli, brassicas, sunflower seeds and pickled caulinini and King Crab with cabbage, Peruvian potato, butter emulsion and finger lime. Main highlights include Nettle Cavatelli with hazelnuts, swiss chard and fresh ricotta and Smoked Duck Breast with squash, foie gras, foraged mushrooms and apple.

 The menu will be ever-changing to reflect the freshest local ingredients and can be viewed here. The 3-course menu is $120 per person and the 4-course menu is $150 per person, with beverage pairings optional. An extended Bar Menu will continue to be available to guests in the bar and lounge.

 Complementing the cuisine are next-level cocktails and pairing local ingredients with Asian inspiration. Changing seasonally, the cocktail menu frequently features ingredients made in-house using seasonal fruits, herbs, and unique spices. The focus on flavor combinations, as well as texture, balance, and finish, create an authentic and memorable cocktail experience.

Charlotte Restaurant & Lounge is open for breakfast from 8:00-10:30 AM daily and dinner from 5:00-10:00 PM Tuesday through Saturday. The Lounge is open from 3:00-11:00 PM Tuesday through Saturday and Happy Hour is from 3:0-6:00 PM Tuesday through Saturday. 11/03/2021 LOTTE HOTELS & RESORTS Notice regarding COVID-19

Thank you for choosing LOTTE HOTELS & RESORTS.
We would like to inform you that accommodation and hotel facilities are restricted as follows:

1. A self-quarantined person
2. Someone who is subject to COVID-19 testing
3. People who have symptoms of COVID-19
4. People who have had a known exposure to someone with suspected or confirmed COVID-19

If one of the following conditions is met, it is permitted to use LOTTE HOTEL facilities after being tested negative for COVID-19.

1. Someone who is fully vaccinated individuals
- After entering the country, you will be quarantined in the hotel room until the result of the diagnostic test.
- You must provide proof of a COVID-19 negative molecular test result within 1 day.
- After submitting a negative PCR diagnostic test result, you can use the hotel accommodation and facilities.
- The proof for COVID-19 negative molecular test results should be provided within 6 or 7 days again.

2. Someone who is unvaccinated individuals
- It must be self-quarantined for 10 days after entering the country, you can use hotel accommodation and facilities after submitting a negative PCR diagnostic test result.
